I adapted this recipe from Fit Mitten Kitchen to create a light, flavorful lunch wrap perfect for a summer day!

It's so hard to leave the grocery store with the exact proportions of everything you need. Last week, I had to run out to grab Greek yogurt that had been accidentally left out of one of our HelloFresh kits, but the grocery store only had really big tubs of it. So I was left with way too much Greek yogurt that I had no idea what to do with.
My phone must have been spying on me, because after complaining to my husband Ryan about the extra Greek yogurt, Pinterest showed me this recipe from Fit Mitten Kitchen that subs mayo for Greek yogurt and overall makes for a healthier chicken salad. I love chicken salad, and I really needed to use up that Greek yogurt, so I made it my goal to whip up these wraps.
As I do with most recipes, I made a lot of changes to suit my needs. For example, I was too lazy to cook my own chicken, so I bought pre-cooked chicken strips that I cut into cubes. I also hate celery, so swapped that with Golden Delicious apples, swapped pecans for almonds (and cut the amount called for in half), and had to use dried cranberries instead of cherries because my store didn't have cherries.
I initially doubted the ratios of garlic and onion powder, but it was just right. I'd even suggest skipping the salt if you want, as the onion and garlic provide enough saltiness on their own. I was heavy-handed on the pepper because I like my chicken salad to have a bit of bite.

Ingredients
2 cups cubed cooked chicken breast
3/4 cup dried cherries (dried cranberries)
1 cup diced celery (diced Golden Delicious apple)
1/2 cup chopped pecans (1/4 cup chopped almonds)
1 cup plain 2% Greek yogurt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 salt and pepper (salt and pepper to taste)
wraps and full-leaf lettuce to serve
Method
Place cubed cooked chicken, dried cranberries, diced apple and chopped almonds in a medium-sized mixing bowl.
Add the Greek yogurt, onion powder, and garlic powder, then mix well until all ingredients are coated. Add salt and pepper to taste.
Place lettuce on wrap, then line with chicken salad. Fold wrap and serve.
