Best-Ever Banana Breakfast Squares

The easiest, most delicious banana recipe you'll ever find.

I am OBSESSED with these breakfast squares and am eating them as I type. They are my favourite breakfast item. They're a snap to whip up, take no time or skill, and are great on their own or as pictured with a thin layer of peanut butter spread on top.
I recommend serving them slightly warmed with peanut butter, but you could also add chocolate chips or peanut butter chips to the recipe for a little something extra. Another great addition would be chopped nuts. This recipe is extremely versatile!
Ingredients
2 medium spotted bananas (you want them to be just passed being ripe, but not yet bruised)
1/4 cup oil (vegetable or peanut)
1/4 cup packed brown sugar
1 large egg
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1/2 cup white flour
1 cup whole oats
Prep time: 5 mins
Cook time: 18-22 mins
Cool-down time: ~30 mins
Total time: ~60 mins
Method
1. Preheat oven to 350 degrees F.
2. In a small bowl, use a fork to mash bananas so that only small chunks remain.

Stir in the oil and brown sugar, making sure no clumps of sugar remain. Add egg, vanilla, and salt. Stir until mixed. Stir in the baking soda, then add the flour and oats. Stir until mixed and all the oats are coated in the mixture. Spread evenly in a well-greased or non-stick pan.

3. Bake for 18-22 mins. Let cool completely, then cut into squares.

4. Recommend serving warmed with peanut butter spread thinly on top.
