Vegetarian Broccoli Stir Fry

HelloFresh Recipe Review

My mouth is watering just looking at this photo again.


My husband and I started ordering from HelloFresh in July, and the Broccoli Stir Fry with Beyond Meat and Garlic Rice is the first dish we tried. I usually hate cooking, but this dish was so easy to whip together, and it tasted A M A Z I N G. We aren't vegetarians, and we could not tell the difference between the Beyond Meat and real meat. I'd even go so far as to say that this tasted better.


Okay, let's talk flavors. You've got your savory from the Beyond Meat, the sauce, and the garlic rice. Then you have your sweetness from the broccoli and chives. The peanuts added a really earthy taste to the dish, and reminded me of some of the best Thai food I've ever had (chicken dumplings in a peanut butter sauce <3).


The broccoli and chives were crunchy and crispy biting into them, and the peanuts balanced out the softness of the Beyond Meat and rice. It was such a well-balanced dish overall and remains one of my top three HelloFresh dishes to this day.

Ingredients


Serves: 2 people

  • 2 units of Beyond Meat

  • 2 green onions

  • 6 g (or roughly 2 cloves) garlic

  • 1 tbsp cornstarch

  • 227 g broccoli

  • 30 g ginger

  • 28 g peanuts, chopped

  • 1/4 cup vegetable oyster sauce

  • 1 tsp white sugar

  • 2 tbsp oil

  • Salt and pepper

 

Method

  1. Cut broccoli into bite-sized pieces. Peel then mince or grate 1 tbsp ginger. Thinly slice green onions. Peel then mince or grate garlic.

  2. Heat medium-sized pot over medium heat. Once hot, add 1/2 tbsp oil, garlic and rice. Cook, stirring often, until fragrant (1-2 min.). Add 1 1/4 cup water and bring to boil over high heat. Reduce heat to low. Cover and cook until rice is tender and liquid is absorbed (15-18 min.).

  3. While rice is cooking, heat a large, non-stick pan over medium-high heat. Once hot, add 1 tbsp oil, then broccoli. Cook, stirring occasionally, until tender-crisp (4-5 min.). Remove pan from heat and transfer broccoli to a plate.

  4. Whisk oyster sauce together with 1 tsp white sugar, 1 1/2 tsp cornstarch, and 3/4 cup water in a medium bowl.

  5. Take your pan from step 3 and heat it over medium-high heat. Once hot, add 1/2 tbsp oil, Beyond Meat, and ginger. Cook, breaking up the Beyond Meat into smaller pieces, until golden (4-5 min.). Add cornstarch mixture and broccoli. Cook, stirring often, until slightly thickened (2-3 min.). Season with pepper to taste.

  6. Fluff rice with fork, then stir in half the green onions and season with salt. Divide rice between bowls, then top with stir-fry. Sprinkle with remaining green onions and peanuts, then serve.
